  • Bring the chicken stock to the boil in a large cooking pot and season to taste with salt, pepper and a few drops of sesame oil.

  • Bring another pot with a large amount of water to the boil with a pinch of salt.
    Boil the shrimp wontons for approximately 3-4 minutes in the water. Gently stir to prevent them from sticking together until the dumplings are floating.

  • Transfer the shrimp wontons to a soup bowl.
    Pour the hot chicken stock over the dumplings and garnish the soup with the bamboo shoots, fresh bean sprouts, spring onions, coriander leaves and freshly ground white peppercorns.
