Chinese Sweet Sausage with Steamed Rice

This dish is so easy and common in Asia, we feel we must share it! Our Chinese friends gave us some sweet sausages and as they appreciate this ingredient, we thought we would try it too?

Best practice to prepare this sweet sausage recipe

It is super easy if you have a rice cooker as you can set your machine to the right time. Water to rice ratio depends on the kind of rice you use. We use jasmine rice in this recipe and here you can use the ‘pinkie trick’ if you don’t have a rice cooker. The water should be about 1.5 cm above the rice (often calculated as one phalanx above the rice.) Add the sausage on top of the rice once you added the right amount of water and cook everything together. 

If you have steamed rice leftovers, you can also steam the sausage separately. Serve the dish with hoisin sauce and some fresh herbs. This is the perfect ‘emergency’ recipe for busy times, and it tastes good too!

Ingredients
 
 

  • 1 ½ cups jasmine rice
  • 1 1/2 cups water
  • 4 pcs dried sweet sausages

For the soy sauce

Instructions
 

Prepare the jasmine rice

  • Rinse the rice to remove the excess starch.
    Drain as much starchy water as possible and cover with clear water up to 1.5 cm above the rice.

Cook the rice (without rice cooker)

  • Immerge the dried sausage in the rice pot.

  • Bring the rice to the boil without stirring and when it starts bubbling (steam holes appear), the grains on the surface look dry, cover the pot with the fitted lid and simmer for 10 minutes then turn off the heat and keep covered. Let the rice steam on its own for 5 more minutes.
    If you have a rice cooker, follow the instructions of your machine.

Prepare the soy sauce

  • Sweat the shallots in oil, add the ginger and garlic, and cook until a golden-brown colour.

  • Add all remaining ingredients to the pan, stir to combine and cook for 2-3 minutes until thickened. Remove the soy sauce from the heat and cool.

Finish the dish

  • Remove the sausages from the rice pot and slice them diagonally.
    Fluff the rice with a fork and serve with the sausages and sweet soy sauce on the side.
