Rinse the rice to remove the excess starch.Drain as much starchy water as possible and cover with clear water up to 1.5 cm above the rice.
Cook the rice (without rice cooker)
Immerge the dried sausage in the rice pot.
Bring the rice to the boil without stirring and when it starts bubbling (steam holes appear), the grains on the surface look dry, cover the pot with the fitted lid and simmer for 10 minutes then turn off the heat and keep covered. Let the rice steam on its own for 5 more minutes.If you have a rice cooker, follow the instructions of your machine.
Prepare the soy sauce
Sweat the shallots in oil, add the ginger and garlic, and cook until a golden-brown colour.
Add all remaining ingredients to the pan, stir to combine and cook for 2-3 minutes until thickened. Remove the soy sauce from the heat and cool.
Finish the dish
Remove the sausages from the rice pot and slice them diagonally.Fluff the rice with a fork and serve with the sausages and sweet soy sauce on the side.
