A Surprising Delicious Cherry Salsa
Fresh cherry salsa is another easy recipe that brings summer to your plate! The sweetness of the cherries with the tanginess of the lemon as well as the fragrance of the herbs and spices make it great as a snack with tortilla chips and a perfect combo with fish, chicken, pork or beef.
There is no need to cook anything. The biggest task in this recipe is to pit the cherries but a good cherry pitter will make it easier. A quick chop of the ingredients and let it macerate for 20 minutes to allow flavours to develop.
We love spice and a little zing in our food but would like to warn you that not everyone likes it as much as we do! Adjust the level of spiciness or leave the chili out. You can also add peppers for more texture. We had this refreshing recipe with steamed tilapia fish and it was delicious!

Cherry Salsa

Ingredients
- 250 gr fresh sour cherries
- 1 pc chopped shallot
- 1 pc lemon juiced
- 25 gr fresh coriander
- 1 pc long red chili
- Olive oil
Instructions
- Wash the fresh cherries, remove the stems, pit them and cut into quarters.
- Wash, clean, and chop the fresh coriander. Remove the seeds of the long red chili and dice.
- Combine the cherries with the shallots, ½ lemon juice, diced red chili, chopped coriander, salt, fresh ground pepper and 2-3 tbsp virgin olive oil, refrigerate.
