- 500 gr potatoes
- 4 pcs sliced spring onions
- 1 pc shredded hard boiled egg
- 2 pcs diced gherkins or pickled jalapenos
- 2 tbsp preserved red onion confit
- 2 tbsp homemade mayonnaise
- ¼ tsp pumpkin seasoning powder
Boil the potatoes in their skins.
When cooled, peel and cut them into chunks and place them in a large bowl.
Toss the potatoes with all the remaining ingredients and season with salt and pepper.
Serve the potato salad as a side dish.
