  • 500 gr potatoes
  • 4 pcs sliced spring onions
  • 1 pc shredded hard boiled egg
  • 2 pcs diced gherkins or pickled jalapenos
  • 2 tbsp preserved red onion confit
  • 2 tbsp homemade mayonnaise
  • ¼ tsp pumpkin seasoning powder

Instructions
 

  • Boil the potatoes in their skins.

  • When cooled, peel and cut them into chunks and place them in a large bowl.

  • Toss the potatoes with all the remaining ingredients and season with salt and pepper.
