There are a lot of different kinds of potatoes but waxy potatoes are the best choice for this salad. Red potatoes, Charlotte and French fingerlings are only a few to mention. They hold their shape better while cooking and don’t taste starchy. Boiling them in the skin makes it even easier for them to hold their shape. Once cooled, they can be peeled and cut into pieces.

Ingredients
- 500 gr potatoes
- 4 pcs sliced spring onions
- 1 pc shredded hard boiled egg
- 2 pcs diced gherkins or pickled jalapenos
- 2 tbsp preserved red onion confit
- 2 tbsp homemade mayonnaise
- ¼ tsp pumpkin seasoning powder
Instructions
- Boil the potatoes in their skins.
- When cooled, peel and cut them into chunks and place them in a large bowl.
- Toss the potatoes with all the remaining ingredients and season with salt and pepper.
- Serve the potato salad as a side dish.
