Prepare the lotus root

  • Peel, wash and cut the lotus root into 3mm slices. Bring water to the boil with salt and boil the lotus root for 8-10 minutes. The lotus root must be cooked but still firm and crunchy.

  • Pat dry the lotus slices, keep aside for later.

Prepare the stuffing mix

  • Combine the minced pork with the ginger, coriander, chilis, spring onion, and hazelnuts. Season to taste with salt and pepper.

  • Add the silken tofu and mix well to combine.

Prepare and cook the lotus root

  • Divide the minced pork into patties.

  • Place 1 pork patty between two slices of lotus root, then press well to equalize the minced pork to the edge of the lotus root.

  • Coat the outside with the white sesame.

  • Pan fry the ‘sandwich’ in vegetable oil over a medium heat for 4-5 minutes until the pork is cooked and the lotus root is crispy.

  • Serve with both sauces.
