Peel, wash and cut the lotus root into 3mm slices. Bring water to the boil with salt and boil the lotus root for 8-10 minutes. The lotus root must be cooked but still firm and crunchy.
Pat dry the lotus slices, keep aside for later.
Prepare the stuffing mix
Combine the minced pork with the ginger, coriander, chilis, spring onion, and hazelnuts. Season to taste with salt and pepper.
Add the silken tofu and mix well to combine.
Prepare and cook the lotus root
Divide the minced pork into patties.
Place 1 pork patty between two slices of lotus root, then press well to equalize the minced pork to the edge of the lotus root.
Coat the outside with the white sesame.
Pan fry the ‘sandwich’ in vegetable oil over a medium heat for 4-5 minutes until the pork is cooked and the lotus root is crispy.
