Creamed Sweet Corn Sauce

Fresh or canned sweet corn is the main ingredient of this sweet corn sauce combined with vegetable or chicken stock and a dash of cream to produce a thick, silky and smooth sauce. This is the ideal sauce to accompany meat or fish.
Consider adding a personal touch with the addition of herbs and spices, such as chives or taco spices. We prefer a simple sauce, and appreciate the pure flavour of the sweetcorn.
We served this sauce with chorizo stuffed rabbit.
Creamed Sweet Corn Sauce

Ingredients
- 2 pcs fresh sweet corns on the cob
- 100 ml chicken or vegetable stock
- 50 ml cream
Instructions
- Boil both corns on the cob in water until they are soft. Cut the kernels from the cobs.
- Combine the kernels with the stock and the cream and boil for a few minutes.
- Blend until smooth.
- Pass thorugh a fine sieve. Season to taste.
Notes
- Canned corn kernels don’t need boiling before combining with the stock and the cream.
