Healthy Rainbow Summer Salad
Would you like a fresh and vibrant rainbow summer salad? There is nothing easier than choosing your favourite seasonal vegetables and assembling them to make a colourful salad.

We like to mix up our flavour and texture choices by using leafy vegetables as well as crunchy ones, but feel free to adapt your choices depending on what is available at the moment. Serve with a dressing of your choosing and enjoy this salad bowl filled with happiness!
What Ingredients Can Be Used in a Rainbow Summer Salad?
Our recipe is basic and will inspire you to create your own colourful salad with your additional choices. Here are some suggestions of products that can be used:
- Raw salads – all kinds of lettuce, endives, pepper sticks, baby cress, or watercress.
- Raw and cooked salads – spinach, peppers, roasted sweet potatoes and pumpkin, shaved cauliflower.
- Mixed vegetable and grain salads – use kale, boiled beetroot, daikon, quinoa, red onions, spring onions, red beans and barley.
- Mixed vegetable and fruits salads – romaine lettuce, coloured baby tomatoes, avocadoes, apples, caramelised walnuts, almonds and black beans.
What Dressings or Sauces Can Be Used
There are a variety of dressings from tangy to sweet and from creamy to light. A list of possible dressings is extensive, but here are a few easy ones we recommend.
- Chimichurri
- Asian lime-honey vinaigrette
- Creamy blue cheese dressing
- Herb dressing
- Raita
- Caesar dressing
- Pesto

Summer Rainbow Salad

Ingredients
- 300 gr fresh amaranth or red spinach
- 300 gr romaine lettuce
- 150 gr red cabbage
- 200 gr tomatoes
- 200 gr cucumbers
- 60 gr red onions
- 300 gr boiled potatoes
- 4 pcs soft boiled eggs
- 4 pcs spring onions
Instructions
- Wash and peel the vegetables.
- Pick the small amaranth leaves as these are more tender.
- Trim and coarsely shred the lettuce.
- Remove the core of the red cabbage and finely shred it.
- Slice the tomatoes, cucumbers, onions and spring onions.
- Peel the potatoes and cut into wedges.
Serve the salad
- Arrange all ingredients in the serving bowl according to colour in a fun way.
- Drizzle the dressing of your choice around the platter.
