Irresistable Strawberry Coconut Panna Cotta
It’s strawberry season! We love it when the red berries come our way as we are inspired to make mouth-watering dishes. No doubt you will have tried many strawberry recipes, but we are more than happy to share more with you and hope you enjoy them.

Why coconut panna cotta?
In this recipe we layer a smooth coconut panna cotta with a freshly made strawberry pie filling and finish with a strawberry coulis. The fresh strawberries balance superbly with the creaminess of the panna cotta. The layering makes this dessert look stylish, and even better, everything can easily be prepared in advance.
Coconut milk is the modern way to modify this traditional dessert to make it lighter and more refreshing. A garnish of fresh fruit adds texture and volume to an already attractive dessert.

What does panna cotta mean?
Panna Cotta simply means cooked cream. The word ‘panna’ is Italian for cream and the word ‘cotta’ means baked or cooked.
What is panna cotta?
Panna Cotta is a chilled Italian pudding-like dessert made from cream, sugar, and vanilla.
Panna cotta was first mentioned in Italian cookbooks after 1960. The Piedmont region in Italy claims the origin of this dessert which consists of ‘cooked cream.’
This popular dessert is often flavoured with coffee, herbs or other ingredients and served with sauces such as berry coulis, chocolate, or caramel.
If you can resist, freshly made panna cotta can be kept in the fridge for up to 3 days when covered correctly. We all need a treat from time to time!

Strawberry Coconut Panna Cotta

Ingredients
- 100 ml coconut milk
- 200 ml full fat milk
- 200 ml cream
- 50 gr caster sugar
- 1 pc vanilla pod
- 6 gr gelatine leaves 2-3 sheets
For the flavour
- Strawberry pie filling
- Strawberry coulis
Instructions
Prepare the panna cotta
- Soak the gelatine leaves in iced water for 20 minutes until soft.
- Meanwhile pour the coconut milk, milk, cream and sugar into a pan.
- Split the vanilla pod, scrape out the seeds, and add to the milk mixture.
- Bring to the boil and reduce to a simmer for 3 minutes to infuse the vanilla.
- Remove the gelatine leaves from the water and stir the soft gelatine into the warm milk mixture until it completely dissolves.
- Strain the panna cotta mixture through a sieve and keep aside for 30 minutes.
Prepare the glasses
- Spoon some strawberry pie filling into each glass.
- Add the coconut panna cotta equally to each glass and refrigerate until set. Repeat to make extra layers (optional).
- Once set, spoon the strawberry coulis on top and garnish with fresh fruit just before serving.
Notes
- If the gelatine leaves are not rehydrated properly then they will not dissolve well.
- The brand and quality of gelatine leaves may differ in weight, and therefore we recommend weighing the gelatine instead of counting leaves.
