A Quick Dark soy and vinegar dipping sauce
Dark soy sauce is an essential staple in Chinese cuisine. Various soy sauces are available, and they can be used in many ways.

It is really easy to make this sauce. You can just mix equal quantities of dark soy and vinegar or you can follow our recipe and elevate the flavours even more. In this sauce the soy adds saltiness and umami and is balanced with the sourness of the vinegar.
How different is light soy sauce from dark soy sauce?
The most important difference is the salt. Dark soy is saltier than light soy but don’t be surprised if light soy sauce tastes saltier. The main reason for this is because dark soy has a stronger soy flavour which overpowers the salty flavour. There are low salt varieties of soy sauce available if you wish to reduce salt in your diet.

Ingredients
- 1 ½ tsp dark soy sauce
- 5 tbsp light soy sauce
- 4 tbsp apple cider vinegar
- 2-3 tbsp brown sugar
- 1 tsp corn starch
- 3 tbsp water
- 1 pc onion (optional)
Instructions
- Dilute the corn starch with the cold water.Combine all ingredients in a saucepan and bring to the boil for 2 minutes.Let it cool and transfer into a sealed glass jar.
