Roasted Asparagus Wrapped in Ham
Roasted asparagus wrapped in ham is perfect as an aperitif, as a side dish or a starter. It is a classic recipe which can be prepared in advance, and if you have been to Spain, you might have seen these asparagus spears on the tapas menu.

What species are the best for roasted asparagus
We like to use the pencil thin asparagus as they don’t need peeling, they cook quickly, and are just the right size for a bite with an aperitif. If you can’t find thin asparagus, use a vegetable peeler to remove the outer skin.
Select a decent quality of prosciutto or Parma ham and add grated Parmesan cheese if you like. Personally, we prefer not to as we find the saltiness of the ham is enough without extra from the Parmesan.
