Ingredients
 
 

  • ½ pc medium cucumber peeled, seedless, and chopped
  • ½ pc green sweet pepper seedless and chopped
  • ½ pc red sweet pepper seedless and chopped
  • 600 gr ripe tomatoes
  • ½ pc spring onion or red onion chopped
  • 2 pcs garlic cloves
  • 30 ml Xeres vinegar
  • 60 ml extra virgin olive oil
  • 75 gr stale crusty bread chopped

Instructions
 

  • Place the cucumber, peppers, tomatoes, garlic, and onion in a mixing bowl. Add the bread and season well with salt, pepper, Xeres vinegar, and olive oil. Combine all and chill for 30 minutes.

  • Blend the vegetable mixture until smooth, check the consistency and the seasoning. Cover and chill again if necessary.
