Quick Coconut Lime Dressing
Coconut cream can be used in different ways and in today’s recipe we are using it to prepare a delicious salad dressing. This might seem unusual to some; however, this coconut lime dressing can also be used as a dip and pairs perfectly with crunchy, raw or roasted vegetables, or with a colourful salad.

Coconut Cream vs Coconut Milk
Although this dressing has quite a few ingredients, it only takes about 10 minutes to prepare from start to finish. Coconut cream can be substituted with coconut milk, but the dressing will be less thick.
The most important part of this recipe is to vigorously mix all the ingredients to obtain a perfect emulsion. We recommend using the dressing immediately.

Ingredients
- 120 ml coconut cream
- 2 tbsp lime juice
- 1 tbsp apple cider vinegar
- 1 tbsp palm sugar syrup or light brown sugar
- ¼ pc grated lime zested
- 1 pc grated shallot
- 1 pc grated garlic clove
- 1 pc grated Thai red chilli
- 50 ml vegetable oil
- 1 tsp chopped coriander
- 1 tsp chopped dill
Instructions
- Combine all ingredients and whisk well until emulsified. Season to taste.

- Transfer the dressing to a glass jar, seal and refrigerate.
