How to get equal shallot rings

Use a mandoline slicer to evenly slice the shallots. The rings will be of the exact same thickness which will make cooking them easier.

  • Peel and thinly slice the shallots and put them in iced water for about 20-30 minutes.

  • Pat them dry and heat cooking oil up to 150°C.

  • Coat the dried shallot rings with corn starch and deep fry them for 4-5 minutes or until golden brown. Stir the shallot rings well to avoid them sticking to each other.
